BIOGRAPHY

Isaac Pérez Borda (they/them) is a Research Fellow at the University of Gastronomic Sciences of Pollenzo, where they are currently engaged in the “STAPLES STable food Access and Prices and Lower Exposure to Shocks” project. In it, they are contributing to better understanding the strategies local populations in North Africa employ to mitigate cereal supply crises in the past, and some possibilities to foresee and reduce the impact of said crises.

They hold a Master’s Degree in Food Innovation and Management from the University of Gastronomic Sciences. In their Master’s thesis “A taste of/for sustainability: an alternative for relating to food and each other” they problematized the main discourse of food sustainability, and proposed an alternative based on ecological thinking, hospitality, and aesthetically active and joyful taste as an integral and more “palatable” part of food sustainability.

They have been a research fellow at UNISG’s Sustainability and Circular Economy Lab, where they worked on projects related to the potential for Circular Economy synergies in the Piedmont region for the Italian Ministry for Environment, Land and Sea Protection. Specifically, mapping five different Piedmontese food supply chains to identify its actors, products and by-products, as well as the possibilities for collaboration within and among supply chains.
