Academic Tables: 2017 Season Launches with Ivan Milani of Piano 35

The 2017 Academic Tables program will open with Ivan Milani, the chef at the new Piano 35 at the top of the Intesa San Paolo skyscraper in Turin. Italy’s highest restaurant has also fast become one of the country’s most fascinating gastronomic destinations.

For Ivan, as he explained during the press conference presenting the program on Thursday February 9, his stay at UNISG will be a kind of return home. He has already collaborated with the university in the past, and before heading the kitchens at this ambitious new Turinese project he also worked extensively at restaurants in and around the Langhe and the province of Cuneo.

He will be preparing a selection of his iconic dishes in Pollenzo on Thursday February 16 and Friday February 17.

Here is his menu:

Lunch on Thursday February 16 will open with a dish that has already become one of the symbols of Piano 35: “Felicetti black spaghetti and the Maira Valley anchovy seller” with sweet Normandy butter and salted anchovies. This will be followed by goose leg and Parmentier cream made with Ratte potatoes. The menu will close with a panna cotta with hazelnuts, spiced with cinnamon, star anise and vanilla.

On Friday February 17, Ivan will present one of his most famous dishes, which he created for his wife Alessandra: an act of love entitled Il tempo delle uova d’oro (“The time of the golden eggs”), which features organic eggs, black truffle butter, crushed Bronte pistachios, gold leaf and truffle perlage. Next will come a seafood dish with couscous and squid, before finishing again with the spiced panna cotta.
