Caterina Ceraudo: a Calabrian Star at Pollenzo’s Academic Tables

The next guest chef will be Michelin-starred Caterina Ceraudo, winner of the Red Guide 2017 female chef award, of Dattilo restaurant in Strongoli in the province of Crotone

Aged just 30, Caterina Ceraudo has already been named the top female chef of 2017 by the Michelin guide and helms a Michelin-starred restaurant, Dattilo, located in the heart of Calabria. Young and talented, she brings her passion and skill to the family-run business in Strongoli and now also to the Academic Tables, where she will be cooking on Monday November 13 and Tuesday November 14.

After graduating with a degree in enology and viticulture from the University of Pisa, she attended Niko Romito’s school in Castel di Sangro. On returning to her native rural Calabria, to the vineyards, olive groves and citrus orchards tended by her father, she took over the family restaurant.

Most of the ingredients she uses in the kitchen come from the family’s property, and her cooking reflects a perfect symbiosis between land and sea, echoing her region and the restaurant’s location close to the coast.

Her approach to food is inspired by a strong passion and determination. Her growing success has been recognized by a Michelin star, in acknowledgement of a remarkable talent that is flowering in a place far from the usual hubs of the culinary scene.

At Pollenzo, Caterina will be preparing one of her menus, deceptively simple in appearance but dense with research, meaning and respect for the ingredients. It starts with an autumnal soup, then continues with cavatelli with roasted tomatoes, chili, lemon and ricotta, followed by pork, potatoes and figs, and finishes with a hazelnut sponge.
