
Enrico Crippa has three star Michelin in his pocket and comes from a lineage of well-known international chefs, from Gualtiero Marchesi to Michel Bras. Enrico has the ability to take a deeply rooted traditional cuisine like the Piemontese one into a contemporary, creative interpretation.
The mainstream of his cuisine is the locality: he recognizes the importance of fresh, quality products. Piazza Duomo, his restaurant located in Alba, opened back in 2005 and receives vegetables from the Barolo and Alba area in addition to the produce from the garden Crippa has developed for the establishment.
The menu is inspired with this fundamental value in mind, with ingredients available in the Langhe during this last week of February, looks like it’ll be a week loaded with pork, cheese and cabbage. The university student body and staff are eager to see these dishes come alive.
Chef Crippa’s menu will be served at the Tavole Accademiche from February 24 until Friday February, 28.
