
On Thursday November 3, Pollenzo’s Academic Tables will be taking on an Indian flavor. The guest chefs will be two young people originally from the Punjab and now members of the Indian community living in and around Bra.
Gurpreet Singh, 28, and Navpreet Kaur, 20, both passionate cooks, will be presenting a selection of dishes from their culinary tradition. In recent years, a growing community of Punjabis has been settling in the plains around Bra, primarily working in agriculture and specifically cattle farming. The community organizes social activities, for example through the Gurudwara Singh Sabha association, which unites 500 Sikh families from all over Piedmont. A cricket team has even been started, and its members are hoping to promote the sport outside their community as well.
At their temple in nearby Marene, Sikhs celebrate religious festivities and also gather together around their traditional foods, some of which will be served to UNISG students.
The menu includes chawal, rice with peas and spices; chole, a chickpea stew with tomatoes, potatoes, onions and spices; and halwa, a dessert made with lentils, almonds, butter and sugar.
