Michelin-Starred Costardi Bros Arrive from Vercelli to Cook at the Academic Tables

This week the Academic Tables will be hosting a very original pair of chefs from Vercelli, the talented young Costardi brothers, with a total of 55 years between them and one Michelin star. Older brother Christian and younger brother Manuel share space in the kitchen equally, with Christian specializing in savory dishes and Manuel in desserts.

Their story is tied to the Cinzia hotel and restaurant in Vercelli, the family business to which they have brought all of their verve and creativity. As a result its fame has spread far beyond regional borders.

They call themselves the Costardi Bros, but despite the international name their flavors are firmly rooted in Piedmont, with a particular focus on the most typical product of their local area, rice.

They will preparing two menus at the Academic Tables on Monday December 12 and Tuesday December 13, featuring unusual and inspired names.

The Monday menu is entitled “Ritorno bambino” (back to childhood) and includes potato with salt cod followed by the Costardis’ tomato rice, then the evocative “Quando pensiamo alle polpette” (when we think about meatballs) and lastly panna cotta and crunchy.

On Tuesday, the menu is “A Colori” (in color), with the concisely named “zucca” (pumpkin), which we can reveal also features amaretti and anchovy flavors; the enigmatic “Costardi’s taglio Sartoriale” (Costardi’s tailormade), for which we can only give the clue “rice”; “Baccalà a Tropea” (salt cod with Tropea onions, an easy one) and finishing with blue cheese with figs and pistachios.
