
The restaurant is set in a small paradise, an unspoilt green valley, a unique place that undoubtedly serves as one of the sources of inspiration for the cooking of Ana Roš, a Slovenian chef with a multicultural, plurilingual background. Along with her husband, sommelier Valter Kramar, she runs Hiša Franko in Kobarid, Slovenia.
Hiša Franko is the historical home of the Kramar family, transformed into a restaurant and a boutique hotel, located a few kilometers from the Italian border and capturing the essence of a place permeated by multiple cultures.
Young and talented, Ana is a refined chef despite being self-taught (she originally studied international sciences), with a reputation that extends well beyond her country’s borders. Involved in various international projects (Identità Golose, Gelinaz, Cook it raw) alongside some of the world’s best chefs, Ana’s cuisine has been influenced by her global travels, but remains closely tied to the resources of her native land: mushrooms, wild herbs, edible flowers, nuts, chestnuts, mountain cheeses and butter, fish from the local streams and sheep and goat from mountain pastures.
At the Academic Tables, Ana Roš will be serving Franko’s traditional roast beef with salad, T’minska frika (potato, herb and cheese frico) and Kobariski struklji (a typical dessert from Kobarid filled with nuts and dried fruit).
