Friday February 5 will see the official presentation of the 2016 Academic Tables program, in the Aula Magna of the University of Gastronomic Sciences of Pollenzo.

Now entering its fourth year, Academic Tables, Pollenzo’s innovative university dining service, has inaugurated a new way of offering high-quality catering. So far it has brought around a hundred chefs and other guests from every continent to our university to share their vast wealth of culture, tradition and experience.
As always, the program offers a mix of Italian and international guests, including Michelin-starred chefs, up-and-coming young talents and restaurateurs from regional tradition. All will be offering a taste of creative, local cuisine, with an eye on cost and seasonality.
This year, ten different countries will be represented—Italy, Austria, Slovenia, France, Denmark, Russia, Turkey, Peru, the United States and Australia—plus a total of 15 stars, with five chefs with one Michelin star and five with two stars.

The 25 new names will be introduced by Eugenio Signoroni, the editor of Slow Food’s Osterie d’Italia guide, along with Carlo Petrini, the president of the University of Gastronomic Sciences. They will be accompanied by a very special guest, Fulvio Pierangelini, one of Italy’s best-known chefs and owner of the legendary Gambero Rosso in San Vincenzo.
