The 25 New Academic Tables Chefs for 2017 Presented Today at UNISG

Today, Thursday February 9, saw the presentation of the calendar of guest chefs for the Academic Tables in 2017 at the University of Gastronomic Sciences in Pollenzo.



Eugenio Signoroni, the editor of Slow Food’s Osterie d’Italia guide, announced the 25 new names along with Carlo Petrini, the university’s president, and guest chef Ivan Milani.

This is the fifth year for the unique university cafeteria project, designed to offer delicious, healthy food, representative of culinary cultures from around Italy and the world, at a fair price and with an educational component. Additionally, the presence of these internationally renowned chefs is an enriching experience for the students, who have the chance to meet them, get to know them and interact with them.

This year will see 17 chefs coming from across Italy, including some who will bring the cuisine of their home countries (like the Ling family, originally from China and now based in Turin), and 9 chefs from abroad (including one Italian, the talented young Christian Puglisi, who works in Copenhagen), who will be representing France, Spain, Denmark, Scotland, Lebanon, Russia, the Philippines and Peru.

Once again, the number of Michelin-star holders is high, including one Italian with three stars, three with two stars and two with one star. Among the international chefs are one with two stars and one with one star. And five of the Italians cook at restaurants that have been awarded the Slow Food Osteria snail.

UNISG also welcomes to the resident kitchen team Davide Testa, a highly experienced chef with a solid background in traditional Piedmontese gastronomy.
