The Ostreria Pavesi’s Pavesi Brothers to Cook at the Unisg Academic Tables

A classic farmhouse of the Po Valley plains is home to the Pavesi brothers’ Ostreria (the misspelling is intentional) in Gariga di Podenzano, in the province of Piacenza.

A passion for cooking runs in the family for brothers Camillo and Giuseppe Pavesi. In the 1930s, their great-grandfather opened an osteria in Podenzano serving traditional dishes prepared using the same recipes that inspire their food today. They are driven by a desire for simplicity and authenticity and aim to make their guests feel as though they are among friends, as they learned from their grandfather and their father, Gigetto, who in the 1970s opened the Ristorante Il Villaggio on the Bagnolo.

This strong family identity is reflected in their cooking at Ostreria F.lli Pavesi, with the flavors of Piacenza’s culinary tradition and its typical dishes always represented on their menus.

The brothers will be preparing two sets of dishes at the Academic Tables.

On Monday May 29, the menu will start with Pisarei e faso’ (a typical Piacenza dumpling with beans, pork rind and herbs), followed by a fresh pea cream with mint and salt cod in oil, then finishing with sbriciolona cake and zabaione.

The next day, Tuesday May 30, the menu begins with a summer vegetable soup, followed by whipped salt cod with baked polenta and a dressed green salad, then for dessert a dark chocolate marquise with salt flakes and a strawberry sauce.
