
A total of 17 students, from the three-year undergraduate degree in Gastronomic Sciences and the two-year graduate program in Gastronomic Sciences and Tourism Heritage Promotion and Management, will be discussing their degree thesis on Wednesday December 14, starting at 8.45 am, in the Cascina Albertina classrooms in Pollenzo.
Here are the students from the three-year undergraduate program:
Maddalena Schiavone, 23, from Turin, Italy, will be discussing her thesis entitled “Il ruolo dell’allevamento suino estensivo e semi-estensivo per la rivalutazione del territorio” (“The role of extensive and semi-extensive pig farming in the re-evaluation of the territory”), supervised by Professor Silvestro Greco.
Alessandra Zaffiro, 22, from Turin, Italy, will be discussing her thesis entitled “Micro e macroplastiche nei mari italiani” (“Micro- and macro-plastics in the Italian seas”), supervised by Professor Silvestro Greco.
Fabio Baj, 22, from Cantello (Varese), Italy, will be discussing his thesis entitled “Fonti amidacee e zuccherine non convenzionali nella birrificazione: aspetti tecnologici, compositivi e sensoriali” (“Unconventional starch and sugar sources in beer brewing: Technological, compositional and sensorial aspects”), supervised by Professor Giuseppe Zeppa.
Tommaso Brazzit, 27, from Cordenons (Pordenone), Italy, will be discussing his thesis entitled “La diffusione del mais e della polenta in Friuli – Storiografia del mais e della polenta nella cultura alimentare friulana” (“The spread of corn and polenta in Friuli: Historiography of corn and polenta in Friulian food culture”), supervised by Professor Simone Cinotto.
Sebastian Felipe Burgos Guerrero, 22, from Bogotá, Colombia, will be discussing his thesis entitled “The Agro-Gastronomical System, Development Strategy for the Post Conflict Era in Colombia,” supervised by Professor Michele Antonio Fino.
Pietro Fasola, 22, from Milan, Italy, will be discussing his thesis entitled “Il ruolo del vino naturale nell’evoluzione del gusto. Definizione di nuovi valori e di una nuova grammatica” (“The role of natural wine in the evolution of taste: Definition of new values and a new grammar”), supervised by Professor Nicola Perullo.
Giulia Gattiglia, 23, from Asti, Italy, will be discussing her thesis entitled “Il cibo come spettacolo” (“Food as spectacle”), supervised by Professor Nicola Perullo.
Martina Graglia, 22, from Castelnuovo Don Bosco (Asti), Italy, will be discussing her thesis entitled “Vieni da Bottura con me – Analisi critica del rapporto fra cucina, arte e comunicazione” (“Vieni da Bottura con me – A critical analysis among cooking, art and communication”), supervised by Professor Nicola Perullo.
Dinah Alisa Rachel Hoffmann, 23, from Berlin, Germany, will be discussing her thesis entitled “Foodies or Food Activists – Opportunities and Limitations of Generation Y’s Impact on Food Movements: The Case of Berlin,” supervised by Professor Paolo Corvo.
Marta Kiderlen, 25, from Formigine (Modena), Italy, will be discussing her thesis entitled “Crociere Sostenibili – Da sogno a realtà. Analisi e ipotesi di sviluppo del progetto per la lotta agli sprechi alimentari di Costa Crociere” (“Sustainable cruises, from dream to reality: Analysis and proposed development of a project to combat food waste for Costa Crociere”), supervised by Professor Franco Fassio.
Alice Minichini, 22, from Rivoli (Turin), Italy, will be discussing her thesis entitled “Schoenbrunner Gourmet-Dirndl: Ethnobotanical uses and experimentations from fruit to vinegar,” supervised by Professor Luisa Torri.
Ginevra Negri, 22, from Rivoli (Turin), Italy, will be discussing her thesis entitled “Origin Green: dalla Tigre Celtica alla Fenice Celtica sostenibile” (“Origin Green: From the Celtic Tiger to the sustainable Celtic Phoenix”), supervised by Professor Lorenzo Bairati.
Giulia Poggi, 22, from Monforte d’Alba (Cuneo), Italy, will be discussing her thesis entitled “Per un’armonia tra vite e uomo” (“Towards a harmony between vines and people”), supervised by Professor Nicola Perullo.
Elena Righini, 24, from Turin, Italy, will be discussing her thesis entitled “Il gelato quale alimento funzionale: aspetti tecnologici, compositivi e nutrizionali” (“Ice cream as functional food: Technological, compositional and nutritional aspects”), supervised by Professor Giuseppe Zeppa.
Vittoria Vandone, 22, from Milan, Italy, will be discussing her thesis entitled “Eat(ing) Art: il convivio nell’arte contemporanea” (“Eat(ing) Art: Conviviality in contemporary art”), supervised by Professor Nicola Perullo.

Anna Erba, 24, Lissone (Monza Brianza), Italy, will be discussing her thesis entitled “Analisi di supporto al progetto di crescita di Bibendum Group Food Experience” (“Analysis of support for the Bibendum Group Food Experience growth project”), supervised by Professor Carmine Garzia.
Matteo Fresia, 25, from Rivalta di Torino (Turin), Italy, will be discussing his thesis entitled “Il biologico in Italia: analisi critica delle normative europee e dei canali di vendita” (“Organic in Italy: Critical analysis of European regulations and sales channels”), supervised by Professor Michele Antonio Fino.
