Pollenzo presents itself from September 20 to 24 in Turin

Lingotto Fiere once again hosts Terra Madre Salone del Gusto 2018, and the University of Gastronomic Sciences also returns to its central location inside the Oval pavillion, with a large stand hosting conferences, tastings, meetings, and presentations: a rich series of activities created in part by the students of our university in collaboration with alumni, professors, producers, and food professionals.
A true example of the versatility of young gastronomes, and of how Pollenzo’s UNISG is an ideal place for the fermentation and fruition of ideas, proposals, and projects.
The majority of scheduled events will take place at the UNISG stand.
Get ready to participate in hands-on presentations on chocolate hosted by former students turned current producers from Colombia, in lessons on sourdough starters and on “forbidden rice,” and in workshops led by our students on a wide variety of subjects ranging from fermented dairy products from around the world and mixology (the art of preparing cocktails) to beekeeping and natural cosmetics.
Furthermore, in the days of Terra Madre Salone del Gusto, the UNISG stand might become your unique stop for “Breakfast”, or in the evenings, “Aperitif” with food producers who are often our graduates.
Mornings, at 10:30am, you might, for example, experience a reinterpreted Colombian breakfast prepared by the pastry chefs of the Bogotá restaurant Minimal, organized by Manlio Larotonda, university graduate and chocolate producer. Or you may try the delicious Sicilian jams and marmalades of Stefano Ferrante from Floridia in the province of Syracuse, paired with herbal infusions from Nicola Robecchi and Rachele Ellena, all three UNISG alumni.
In the evenings, around 7:30pm, it’s time for an aperitif with original pairings, to taste vermouth, natural wines, and artisanal beers with preserves and cheeses from a selection of the best regional Italian producers.
In addition to these strictly culinary moments is the opportunity to reflect and discuss on diverse themes in the world of food, such as: taste and health; how the diet of Indigenous Australians respects the climate; health and environment; and the topic of animal welfare.
Furthermore, visitors can meet gastronome graduates from around the world who will recount the stories of their professions and creative projects.
A further event of great interest held by the stand is the conference dedicated to the theme of Food Studies with UNISG and international professors and the presentation of the current projects of the U.S.-Italy Fulbright Commission. Events also include the roundtable discussion dedicated to the “Food for Inclusion” project aimed at refugees and created by UNISG with the support of UNHCR, as well as a meeting with Korean Buddhist monk Ven. Jeongkwan dedicated to temple foods, and a conference on the supply chain of game meat and how it can be considered from a sustainability perspective.
There are still more initiatives spread throughout the city of Turin that feature UNISG, in particular with presentations by our professors or collaborations on projects with major social impact.
One example is the conference that will present the results of the European project “SUSPLUS: Innovative Education towards Sustainable Food Systems,” which regards the innovative approaches to university education on sustainable food systems. Additionally, there is the “The Difference at the Table” dinner, organized by a group of refugees involved with the educational “Food for Inclusion” project carried out by the University of Gastronomic Sciences with the support of UNHCR. Further numerous conferences dedicated to the globalization of cacao, natural foods, foraging, professional prospects for gastronomes, food for children, and more are all scheduled.
Finally, UNISG students have also kept in mind those who want to discover the best of the Terra Madre Salone del Gusto marketplace by making available Personal Shopper tours. Beyond this, there is a “fun” side to the event in the form of a team Treasure Hunt competition for adult visitors to discover the products and faces behind Terra Madre Salone del Gusto, as well as the Junior Treasure Hunt (for ages 6-13) to allow even the youngest visitors to get to know the most interesting and educational details of the market’s products.
Even the “athletic” perspective has been considered: for lovers of two wheels, the Bike n’ Eat culinary bicycle tour will explore the lesser-known corners of the city, with tastings, producer meetings, and visits to symbolic locations in Turin, along with food and wine-related stories of the city.
And while Turin is full of events, Pollenzo also has something to offer. For those who wish to explore beyond the city, UNISG will be open to visitors each day of Terra Madre Salone del Gusto during pre-determined hours and by reservation.
